Maple Truffle Cookies
Soft, chewy maple cookies with a whole chocolate truffle tucked inside, so every cookie breaks open to a molten centre. Smitties Maple Cream Truffles are made for this, but any truffle works.
Ingredients
- 1/2 cup (115 g) soft butter
- 1/2 cup (100 g) brown sugar
- 1/4 cup (60 ml) maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 3/4 cups (220 g) flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 12 Smitties Maple Cream Truffles
- Icing sugar for dusting
Method
- Beat the butter, brown sugar and maple syrup until creamy, then beat in the egg and vanilla.
- Mix in the flour, baking soda, cinnamon and salt. Chill the dough 30 minutes.
- Heat the oven to 180°C (350°F) and line two trays.
- Flatten a heaped tablespoon of dough in your palm, set a truffle in the middle and wrap the dough around it. Repeat to make 12.
- Bake 11 to 12 minutes until golden at the edges. Cool 10 minutes on the tray.
- Dust with icing sugar and serve warm, while the centres are still soft.
